Classy cocktails top off a meal

ALCOHOL is the perfect compliment to any occasion but no longer is it as easy as bringing along a bottle of wine or six-pack of beer. According to Tonic Bar manager Stephen Higby, cocktails and mocktails are making a comeback and provide an opportunity for hosts to show their artistic flair.

“People put so much effort into cooking a great meal so they should also put some effort into something that complements it,” he said.

“Fifty years ago everyone made martinis and then we kind of lost it for a bit but I think cocktails are on the way up again.

“Cocktails really put you in the mood and make you feel as if you are on holidays.”

So instead of heading to the bottle-o to buy a cheap box of wine, Mr Higby urged people to buy a cocktail book and start experimenting this Christmas.

“If it’s a cold day I’d suggest trying suggest try a Caipiroska or if it’s a bit cooler go for the chocolate minty flavour of a grasshopper,” he said.

“But it’s not just cocktails that are great – you can have some really great fruit mocktails which are just as yummy.”

15ml creme de menthe

15ml shambu

120ml cream



2 mango cheeks

Scoop of ice-cream 120ml pineapple juice


Shake all ingredients with ice:

1 shot creme de menthe

1 shot creme de cacao

1 shot milk

1 shot cream


1 shot vodka

8 lime wedges

1tsp sugar

Crush sugar into the lime wedges with a spoon. Place the lime wedges into the bottom of an 8.oz glass.

Cover with crushed ice, fill glass with vodka, serve.
